About Me

Hi! My name is Liz, and I'm currently a sophomore at Colorado College. Baking and writing have always been two of my favorite things ever, so I thought why not combine them?! From ice cream, to cakes, to creme brulee, I make every single type of dessert. Baking for me is a whimsical hobby, a means of destressing, and a way of making others smile. Nothing compares to that warming satisfaction from the first bite of a successful, new recipe or flavor combination.

I am a baker, but just recently I have gotten into cooking ever since I discovered my addiction to the Food Network and the Travel Channel. Most of my recipes are variations off of other recipes I have found, but more and more I have taken off the recipe training wheels and cycled away towards the fridge on my own.

Travel and the outdoors are also huge parts of and passions in my life. I ski, rock climb, backpack, mountaineer, hike, and basically anything else where I can be in the outdoors. Just like with my recipes, I can't help but wanting to share such domestic and international adventures with the world in hopes of inspiring others to explore the world themselves.

The name "The Lunch Box" came from my love of...well lunch time! At heart, I'm quite a fourth grader and little things excite me quite easily. Grilled cheese is my absolute favorite food in the world and I love to do crazy, unique variations on them. I like to think of this blog as a lunch box carrying my stories as if they were a peanut butter and jelly sandwich.
